Blog Post: Homemade Dandelion Jelly

Ingredients:

4 Cups of Freshly Washed Dandelion Petals

3 Cups of Water

4.5 Cups of White Sugar

2 Tablespoons of Lemon Juice

1.75 Ounce Package of Powered Fruit Pectin

1 Drop of Yellow Food Coloring (Optional)

 

Directions:

1.     Wash your dandelion petals and scatter on dish towel to drain.

2.     Heat water in a large pot until it begins to simmer.

3.     Add half of dandelion petals and let simmer for 8 minutes.

4.     Remove petals from water and place in cheese cloth. Strain out excess water above bowl. Discard petals.

5.     Repeat process with second half of petals.

6.     Measure 3 cups of infused dandelion water and pour into a clean pot.

7.     Add in lemon juice, pectin, and food coloring – bring to a boil.

8.     Add in sugar and cook for approximately one minute – stirring constantly.

9.     Remove from heat and stir well.

10. Pour mixture into sterilized jars if you are planning to refrigerate and use. Fill jars until ¼ inch of the top is remaining.

11. Take a butter knife or small frosting spatula and run around the edge of each filled jar to encourage bubbles to dissipate.

12.  Clean the rim of each jar and tightly screw on lids.
